INGREDIENTS

  • 800G Eggs
  • 600G Pettina Choux Pastry Mix
  • 600G Warm water (60/70°C)

INSTRUCTIONS

Place Pettina Choux pastry Mix and warm water in a mixer.

Start to mix on low speed.

Add eggs one at a time and leave 20 seconds between each egg to insure full emulsion.

One Blended, mix on high speed for 5 min or until batter is smooth.
